Definition:   This bond guarantees payment of taxes or fees imposed by the state or local law for the sale, manufacture, or storing of liquor and other alcoholic beverages.  This surety bond protects the obligee from falsified records of sale or nonpayment on previous sales.

Surety on the Rocks:  Watermelon Summer Smash ¼ Cup simple syrup (made from ¼ sugar and ¼ water) 1 lb seedless diced watermelon ¼ cup fresh lime juice 1 ¾ cup blueberries ¾ cup lightly packed fresh mint – plus extra for garnish 1 ¼ cup tequila
  1. Puree the watermelon in a blender until smooth and strain to extract all the juice.
  2. In a large pitcher, combine simple syrup, lime juice, berries, and mint. Lightly muddle.  Add watermelon juice and tequila and refrigerate until chilled.
  3. Pour into tall, ice filled glass and garnish with mint.three drinks
